What I’m Loving This Month: January

Oh January. Big goals, lots of sick days, and the rough end to our football season.  (Yes, I know it’s February now, but just humor me, will you?) I thought this would be a fun series to (attempt) to keep up with. These are recipes that I am into, ones y’all are raving about, and some of the other random things we talk about on Instagram.

I thought this would be a fun series to (attempt) to keep up with. These are recipes that I am into, ones y’all are raving about, and some of the other random things we talk about on Instagram.

New Year, New Recipes? Pick a few ingredients, find some new recipes that use those ingredients, and have fun! Below are some of my own that I have been cooking up, as well as some new ones from other amazing foodies that I love.

These Sweet Potato Oatmeal Muffins are perfect for this time of year. They are nutrient dense and incredibly tasty! Bake em’, freeze em, and keep breakfast and snacks easy. 

This Chicken Ranch Breakfast Hash  from The Defined Dish is tasty & a great thing to prep on the weekend and then serve for breakfast throughout the week. It is also the perfect dish if you are hosting a brunch! 

Even if you aren’t participating in a Whole30, this homemade garlic ranch is a fridge staple at my house.

These Sloppy Joe Sweet Potato Fries are the ultimate comfort food, but cleaner!

Have you tried broccolini? It’s broccoli’s cooler, older cousin. This stirfry is a great & easy recipe to try it out in!

Alison Roman basically broke the internet with #TheStew. I was having a little FOMO, so I gave it a try. This Spiced Chickpea Stew is worth it. It is a great vegetarian soup option.

The only thing that makes Chicken Alfredo tastier is when it’s all combined in one skillet for easy clean up. This is a crowd pleaser, so you just might want to double it up for leftovers. 

These Peanut Butter Nutella Crunch Bars are a great dessert and also pack a fun, surprise ingredient. 

This month, we were also discussing the beauty of COMPLETELY customizable planners. I have an Agendio and I’m pretty much obsessed.

We also agree that this Thermal Paddle brush is the answer to ALL curly girl prayers. We are talking straightened hair in less than half the time with minimal heat damage.

Lastly, we spent most of the month in a red haze cheering on the Chiefs.  The year was incredible but came down to a heart-wrenching final minute.
