If you saw my post yesterday and are back, you definitely came for the Tea Cakes recipe I promised. It’s coming a little later than anticipated but there is still time to hop in the kitchen and whip up a batch!These are the second type of cookies I ever made Jeff. If he wasn’t in love before that, these sure helped! I’m KIDDING! Before I was making them for Jeff, I was making them with my mother. She would sit and reminisce about the amazing cookies her grandmother would make. My mother never got the original recipe but with a little research on the internet, we found a decent starting place. After many ‘failed’ batches, we ended up with this winner!
I also use this recipe as the “crust” for my fruit pizzas. If you feel inclined, add a thin layer of frosting for a really sweet treat. The dough isn’t really firm enough for roll out cookies though, I tried. Don’t say I didn’t warn you! The center of these cookies are soft and chewy with a crispy crust. They hold their shape unlike other similar cookies.
