Whole30 Chicken Tacos al Pastor

This is a loose interpretation of Chicken Tacos al Pastor. I was in a pinch the the other day, and I impressed myself with this easy pressure cooker recipe. It can of course be adapted for a slow cooker, but flavorful chicken tacos in less than 20 minutes is ALWAYS a win.
I wasn’t initially sold on the idea of an electric pressure cooker but after borrowing my parent’s for a couple weeks I was amazed by the ability to get dinner on the table in record time with one powerhouse device.
To adjust this Chicken Tacos al Pastor recipe for you slow cooker, all you need to do is follow the instructions as is, and add 1 C of chicken broth (or water) and cook for 3 hours on high* or 5 hours on low*.
The family loved them, and the leftover were saved for taco salads.
The sweet, smoky, and flavorful marinade really takes these to another level. If you are a fan of salsa chicken or ‘Dump and Go’ recipes, you will love these.
