This Asian marinated flank steak is the first of MANY meals that will be prepped in full on the grill.

Now that summer is here, I am planning on cooking 70% of our meals on the grill. Here are 3 reasons why:

  1. Less dishes to wash.
  2. An excuse to sit outside with our daughter and let her run out some afternoon energy.
  3. More likely to eat healthier.

When we crank up the grill, we try to toss the whole meal on it. No time to run back inside to check on something in the oven or on the stove. Good thing this delicious Asian flank steak + roasted broccoli fit the bill! It was easy to prep the marinade during my Sunday Meal Prep and whip it out for an easy Monday night meal.

The broccoli was cooked on an aluminum sheet pan placed right on the grill. A little avocado oil, salt & pepper, and we had crispy roasted broccoli without turning on the oven.

I highly suggest you invest in a meat thermometer if you plan on joining the grilling movement. Overcooked meat is a bummer. This one does all the work and guarantees perfect cooked steak, chicken, and pork!  

Asian Marinated Flank Steak

Yield 5 servings

An easy flank steak marinade perfect for weeknight grilling.  It's got soy sauce, ginger, garlic, and honey to create the most delicious and tender steak served with grilled vegetables and a ridiculously easy slaw.

Ingredients

  • 1- 2 lbs of Flank Steak
  • 1/3 C Soy Sauce
  • 1/4 C Honey
  • 3 Tbsp Balsamic Vinegar
  • 1 tbsp Worcestershire
  • 1/2 C Avocado Oil
  • 4 cloves of Garlic, grated*
  • 1 inch piece of ginger, grated*
  • Broccoli Slaw
  • 1 bag of broccoli/ carrot slaw
  • 1/2 C Asian Peanut Dressing (I used the one from Trader Joe’s)

Instructions

  1. Combine all the ingredients for the marinade in a bowl and whisk till combined.
  2. Place the steak in a large freezer bag. Dump the marinade on top. Let marinade for at least 10 hours; 24 was best!
  3. Grill till desired doneness. Baste with remaining marinade. Let rest on cutting board for 6 minutes before slicing.
  4. To prepare slaw: toss slaw and dressing in a bowl till coated.
  5. To prepare “grilled” broccoli: toss with oil, salt and pepper and cook on aluminum sheet pan. Stir occasionally till the florets begin to crisp up.

Notes

*if you don't have a microplane to grate the garlic and ginger, you can mince them up very finely.
