This summer, I have been out on the grill probably more than my husband! There is immense satisfaction in smoking and grilling meats to perfection. I’m still learning and always improving but this here brisket— always turns out well! My go-to homemade Texas BBQ Brisket rub is flavorful; smoky, sweet, and a tad spicy. It was created with tacos in mind but makes a DELICIOUS sandwich, stuffed potato filling, breakfast hash, nacho, and homemade burrito bowl.
If your concern with smoking a brisket is what to do with all that meat, just check back here and I will have plenty of suggestions. If you MUST, which I doubt will, you can freeze it!
The recipe for this Texas BBQ Brisket Rub will generously cover about TWO 8 pound briskets or one very large brisket.
I will be sharing more about my method but I am an avid Traeger user.
This is what I did:
I turn it on to smoke and 225 degrees. Once it’s ready, I place the rubbed and seasoned brisket directly on the grates. Let it smoke till it reaches an internal temperature of 160 degrees. Then, according to the crutch technique, I wrap the brisket tightly in foil (or grilling parchment paper) and place it back on the grill till it reaches an internal temperature of 194 degrees. Then let it rest for at least 45 minutes preferably more. Then get ready for your happy dance because when you taste that bad boy, you will definitely want to celebrate– it’s delicious!
