4 Layer Delight and Hometown Showdown

As I mentioned last week, things are getting busy. The Chiefs got their first win of the regular season and I finally got the chance to meet some of the other fiancés/ wives/girlfriends on the team. One of the coach’s wives arranged a lovely potluck at her home last Monday. I never had time to rush or pledge for a sorority but I imagine this event was very similar. We all knew one or two people but it was a room full of women linked by one thing—football.  We snacked on healthy salads, mac and cheese, dips, and desserts. I can’t decide which was more difficult; finding something to wear or deciding what dish to bring. 

Thank God for Nana. I gave her a call and she had at least four ideas. Concerns about outlets, crockpots, and oven space pointed to one thing: dessert! We have always bonded over sugary goodness from pies, to coconut cakes, to pecan candies. She suggested a “Four Layer Delight”. It was foolproof, traveled well, and left a little room for my own personal touch. I whipped this up (literally!) the morning of the party and left it in the fridge until it was time to go.

Almond Flour 4 layer delight 

For this recipe you will need:

½ C of Flour

½ C of Almond Flour

1 Stick of Unsalted Butter

1 package of softened Cream Cheese (8 oz)

1 C of Powdered Sugar

1 Large container of Lite Cool Whip

2 small packages of INSTANT Chocolate Pudding

3 C of Milk

The traditional recipe calls for a simple flour, pecan, and butter crust pressed into a 9×13 Pyrex dish. I decided to dress it up a little bit and instead of all white flour, I used some almond flour (basically pulverized almonds available at Trader Joe’s) and walnuts instead of pecans. 

Preheat your oven to 350 degrees. Spray your 9×13 Pyrex dish with non- stick spray.

In a medium bowl, combine your white and almond flour, melted butter, and walnuts. Once a mixture is formed dump into your greased baking dish and patiently press into the bottom to form a crust. Don’t get discouraged; it seems like there’s not enough but use your palms to press and spread the mixture to all four corners.

Pop that in the oven for 15 minutes if you have a convection oven, or 18 minutes if you have a traditional oven. You are looking for a warm golden color. When the crust is ready remove from the oven and set aside so it can cool completely.

Now it’s time to prep the other layers.

LAYER #2

Combine cream cheese, 1 C of powdered sugar, and 2 C of the Lite Cool Whip in a bowl. Whip till smooth.

This layer was so simple I didn’t even take a picture. Empty the 2 pudding packages into a large bowl and add three cups of milk. Whisk till all the lumps disappear and set aside. It will thicken in about five minutes.

This is just the remaining Cool Whip Spread on top.

Assembly is pretty simple: once the crust cools, spread the layers in the order above, cover, and leave in the fridge.

Some garnish options include crumbled graham crackers, chocolate chips, chocolate shavings, or walnut pieces.

Finished Product 

Jeff came home right when I was getting ready to leave and got a peek of dessert. He was very disappointed when I wouldn’t cut him a piece before the party. Presentation is everything so that just wasn’t an option.  I did make sure to bring him some home though!

I’m really interested in trying this recipe again but tailoring it for banana pudding. I’ll keep you posted on the results.
